Valentine's Strawberry (Heart) Crepes
Quick and easy recipe that is quaintly romantic and appropriate for Valentine's Day. Crepes are like a very delicate combination between a pancake and an omelet. Despite the fancy sounding name, the recipe is very simple.
.5 cup Flour
.5 cup milk - Try Silk, soy milk, for extra smooth crepes
.5 cup water
Two Large eggs
Quarter Teaspoon Salt
1.5 Tablespoons Butter (melted)
5 Strawberries sliced vertically into hearts
Whip cream if desired
1. Whisk together all wet ingredients: Milk, Water, Two eggs and butter.
2. Add the salt. The add the flour a little at a time while whisking. Best if using a handheld sift. Sift in just a couple of clicks and whisk.
3. Lightly coat a griddle or frying pan with a non-stick agent or grease. Set to medium heat.
4. Take four tablespoons(quarter cup) of the batter and spoon into the center of the pan. Swirl the pan gently to even out the crepe. Should take only a couple of minutes on each side. You want them to be slightly browned.
5. Serve right off the pan, garnish with the strawberries and a portion of the whip cream.
This is a fun, quick meal for any day and can add a touch of romance to your Valentine's Day breakfast.

Catering By Celebrations: Jalapeno Bites Recipe
We like to keep our menu updated with new dishes that you may enjoy. Here is a recipe that we are currently trying, perhaps you'll see it on our menu. Try it out and let us know if you enjoyed(we simplified a few steps for you).
Half cup cream cheese (Softened)
Half cup shredded sharp cheddar cheese
Quarter cup Mayonnaise
8 Fresh Jalapeno peppers, halved and seeded (freshness is key)
1 large egg, beaten
Half Tablespoon milk
3/4 cup Crushed Corn Flakes
Directions:
-Preheat oven to 350 degrees F. Spray a non-stick on your baking sheet, aluminum foil makes clean-up easier.
-Mix together cream cheese, sharp Cheddar cheese and mayonnaise. Fill jalapeno halves right to the brim.
-Whisk together eggs and milk in a small bowl. Place crushed corn flake cereal in a shallow bowl or large plate.
-Dip each stuffed jalapeno half into the egg and milk mixture, then roll in corn flake cereal to coat. -
-Arrange in a single layer on the prepared baking sheet. Bake in the preheated oven 30 minutes, or until filling is bubbly and lightly browned.

Catering By Celebrations: Picking the Perfect Wedding Day
Mid February - End of May:
While the beginning of spring is great for bringing in fresher, cheaper flowers, the threat of impending bad weather can turn an out-door affair into a disaster if a legitimate backup plan isn't secured. "April showers, brings May flowers" - keep this in mind, if you want an outdoor spring wedding. This is also a good time of year if you have lots of traveling family members, they'll have had time to recover financially from the holidays and it is before they go on their summer vacations.
June - End of August:
If you are planning a wedding in South Texas, this time of the year is very hot to say the least. Roses will be in bloom and readily available at lower costs. You will see that there are many weddings during this time of year, so be sure to book all of your venus and services well in advance; they may be a bit more expensive this time of year because of the extra demand. If you are planning to have an evening wedding, this time of year is best as you will have a few extra hours of daylight. If your family has lots of school-aged children in it, this adds to the benefit of a summer wedding since they will be out of school and ready to travel.
September - End of November
Weather wise, it is hard to go wrong with this time of year in South Texas. It is starting to cool down, but you still have days that remind you of summer. If you are in the market for smaller, upscale wedding, this is a good time frame to save a few bucks. Weddings are less common during this time of year, so you might be able to get a deal at some venues and on most services. Your gifts might not be as nice as some families have just gotten back from summer vacation and are bracing for the holidays, but overall you'll come out ahead.
December - Mid February
December is an excellent month if you are looking for a deal on a wedding. DJs, musicians, photographers and other services will be in the market to a make a few more bucks during this time of year as their calendars might be a little empty. They may even be willing to stay a little later if the following day is open on their schedule. The biggest "Love" day of all is in this range, so steer clear of Valentine's Day, unless you truly have your mind set on this day.
